I am betting everything I have on a bag of tofu
My name is Emilio, and I am spending the last $20,000 to my name and the rest of 2026 on this. Two years ago my partner handed me a snack I had never heard of in my life, and she could not believe I had never heard of it, because where she grew up it is everywhere — small ready-to-eat pouches of tofu, marinated in something savory, sold next to the chips.
Here, the shelf gives you a sweet protein bar or dry beef jerky, and that is about it. Say the word tofu to an American and they picture wet white curds that only survive in a fridge. Meanwhile East Asia has been eating the shelf-stable kind for roughly a hundred years.
So that is the question I am betting everything on: why is there no ready-to-eat tofu on our shelves yet? Me on the flavors Americans already reach for, our food scientist co-founder on the part that makes it real — pressed, seasoned, shelf-stable, and worth eating on an ordinary Tuesday.
